Photographs of both Bargarh outlets, the counter, the kulhads and what we pour. Every image here is from our own counters.
The counter
Both outlets are roadside stalls with a lit signboard, marigold garlands at festival time, and plastic chairs on the pavement. There is no indoor seating.
The kulhads
We use unglazed terracotta cups throughout, washed and replaced through the day. If you see a paper cup at our counter, something has gone wrong — please tell us.
The masala
Whole spice — clove, cardamom, cinnamon, pepper — is ground and boiled with the tea rather than poured from a jar.
